Directions:

- merge sugar, corn syrup, and water.
- Bring to a boil, stirring constantly.
- cut heat and cook to hard ball stage.
- merge beaten egg whites and gelatin - beat until compound forms stiff peaks.
- Pour hot syrup slowly into egg whites, beating until candy loses gloss and holds shape.
- Fold in coconut and nuts (optional).
- Pour into greased 9 inch quadrilateral pan.
- Top with rows of chopped nuts and coconut.

3. Chocolate Turtles

Ingredients:

For The Turtles

- 2 squares of chocolate
- 1/2 cup of margarine
- 2 eggs
- 3/4 cup of sugar
- 1 cup of flour
- 1 teaspoon of vanilla

For The Icing:

- 1/2 quadrilateral of chocolate
- 1/2 cup of brown sugar
- 1/4 cup of water
- 2 1/2 tablespoons of butter
- Powdered sugar

Directions:

- Melt 2 squares of chocolate and 1/2 cup of margarine.
- Beat 2 eggs. Add sugar. Fold chocolate compound into egg mixture.
- Fold in 1 cup flour and 1 teaspoon vanilla.
- Drop by teaspoon on hot waffle iron (low).
- Bake 50 seconds.
- Cool and frost.
- Icing: Boil chocolate, brown sugar, water, and butter 3 minutes.
- Take off heat.
- Add powdered sugar until thick.
- Put on turtles.
- Sprinkle with ground nuts.

4. Coconut Bon Bons

Ingredients:

- 3/4 cup of instant potatoes (2 servings cooked, but not seasoned)
- 4 cups of flaked coconut
- 1 - 16 oz. Container of powdered sugar
- 1 teaspoon of almond extract

Directions:

- Stir together the instant potatoes, coconut, powdered sugar, and the almond extract, mixing thoroughly.
- Refrigerate the compound for 1 to 2 hours.
- Melt a 12 ounce bag of semi-sweet chocolate chips and 1/3 of a bar of paraffin was in a double boiler.
- Shape the coconut compound into small balls and dip in the melted chocolate.
- Lay on waxed paper until cool.

Jack o' lantern Cake Instructions


Before you whip up a batch of buttercream, take out a piece of paper and sketch some Jack o' lantern faces. If you have kids at the house, enlist their help. Searching “Google Images” for Jack o' lantern will also deliver lots of ideas. Once you've narrowed down your favorites to a final selection, convention drawing it to make the piping easier.

Ready? Here we go!

1. Bake 2 Bundt cakes. Coincidentally, pumpkin works like a charm for a Halloween model cake because of its firmness (see recipe below). Butter cake works well too.

2. After releasing and cooling the 2 cakes, level the bottoms.

3. Ice the bottoms with orange buttercream (non crusting is best for this project). Place one upsidedown, and the other on top, so the iced bottoms fit together.

4. Now, cover the cake with orange buttercream. As you plane your icing, you can work with the natural indentions left by the Bundt pans that mimic the vertical lines on a real pumpkin.

5. Using the orange buttercream, pipe the outlines of the facial features. If you make a mistake, just plane it and start over. 5. Now for the fun part! Here are a few ideas for creating the details of your Jack o' Lantern's face.

a. Fit an icing bag with a small star tip and fill with chocolate buttercream. Fill in the eyes, nose and gaps in the middle of the teeth.

b. After completing the step above, add details such as pupils to the eyes with icing candies, like M&M's and black licorice.

c. To make your Jack o' lantern glow, use yellow gel instead of chocolate buttercream (remember not to cover the teeth and other places that would be left intact in a real Jack o' Lantern).

d. Instead of piping facial features, bring Jack to life by modeling eyes, nose, teeth and any other features you want to add (eyebrows?) with rolled butterceam icing or marzipan.

Just like a real Jack O' lantern your Bundt o' lantern will have a hole in the top. Here are a few ways you can put the lid on Jack.

a. Cover an ice cream cone with green or chocolate buttercream and using icing, cleave this upside down over the hole in the top. Then using a large leaf tip, pipe a few green leaves around the top.

b. Model the stem and leaves with rolled buttercream.

c. Save just enough batter from the recipe below to make a cupcake. Trim it for the stem shape you want and cleave with icing to the top.

Halloween Pumpkin Cake

Note: This pumpkin cake makes a great treat for grown-ups too, and it's even more devilishly delicious with a buttercream and chopped nuts icing.

4 cups canned pumpkin

6 cups sugar

2 cup vegetable oil

6 eggs

6 cups flour

1 tsp salt

1 tsp baking powder

2 tsp baking soda

1 tsp ground cloves

2 tsp ground cinnamon

2 tsp ground nutmeg

Preheat oven to 350° F. Grease and flour 2 10-inch Bundt pans. Blend the pumpkin, sugar, oil, and eggs. Sift remaining ingredients into a separate bowl. Mixing as you add it, spoon the pumpkin composition into the dry mixture. Blend well. Pour the batter into the prepared pans. Bake until a toothpick inserted in the middles comes out clean (around an hour and 15 minutes). Allow cakes to cool in pans for 5 minutes. Release, and after wholly cooled, decorate.

Serving Tip: This is even better tasting and easier to work with after mellowing overnight, covered in the refrigerator.

Last but not least, here's one more tip. The quantity of liquid food coloring needed to concoct Halloween brown and black will bring a bitter flavor to your buttercream. Here's what you can do to keep the ghoulish elements in the form and out of the icing:

• Use chocolate for brown and start with dark chocolate for black (and you won't need as much black food coloring).

How to Fill a Cake - Using Flavored Fillings in the middle of Cake Layers

Using flavored filling to fill a cake is a great way to give a unique and flavorful twist to your cake. Fruit flavors are used most often, but there are a collection of other flavors that can be used also. Some beloved filling flavors are:

- raspberry filling
- strawberry filling

Homemade Chocolate Candy Recipes

What you will need to fill a cake:

- 2 baked cake layers
- metal spatula
- pastry bag (10" or larger)

Drop your coupler into your pastry bag. We are going to use the pastry bag and coupler without a pastry tip to make a "dam" for the filling.

Fill your pastry bag with frosting.

Now, we are going to make our "dam" for the filling. This will help keep the filling from oozing out the sides of the cake.

Using your pastry bag, squeeze a ring of icing nearby the outer edge of your cake layer. Just do this one time nearby the edge of the cake.

Next, we are going to add the filling. You want your filling to be no more than 1/4" thick on your cake. Place the filling in the town of the cake and spread it outwards towards your "dam".

You want to make sure to spread it evenly. Again, you only want it about 1/4" thick. Any thicker and the filling will most likely squish out the sides of the cake layers.

You are now ready to place your other cake layer on top, ice, and decorate.

- 1 1/2 pounds real milk chocolate for dipping 1 cup finely chopped chocolate, milk or semisweet for decoration

Directions:

- Melt semisweet chocolate in double boiler over hot water.
- Heat butter, creamer and vanilla in an additional one saucepan to 125° F on a candy thermometer. - Add to semisweet chocolate all at once, beating until flat and creamy.
- Chill in refrigerator until nearly set but still pliable.
- Beat with mixer until light and fluffy.
- Spread in 9 inch buttered pan until set adequate to roll into small balls.
- Melt milk chocolate over double boiler.
- Dip truffles in melted chocolate, then sprinkle generously, or roll in, chopped chocolate

Makes about 3 dozen truffles

3. Mocha Truffles

Ingredients:

- 2 packages (12 oz each) Semi sweet chocolate chips
- 8 oz. Cream cheese, softened 3 T instant coffee granules 2 tsp.
- Water 1 lb.
- Good dark chocolate cocoa confection coating white confection coating, optional

Directions:

- In a microwave-safe bowl or double boiler, melt chocolate chips.
- Add cream cheese, coffee and water; mix well. Chill until firm adequate to shape.
- Shape into 1" balls and place on a waxed paper-lined cookie sheet.
- Chill for 1-2 hours or until firm.
- Melt chocolate coating in microwave-safe bowl or double boiler.
- Dip balls and place on waxed paper to harden.
- If desired, melt white coating and drizzle over truffles

Makes about 5 1/2 dozen.

4. Peanut Butter and Chocolate Truffles

Ingredients:

- 1 C peanut butter chips
- 3/4 C butter
- 1/2 cup cocoa
- 1 can (14 oz) sweetened condensed milk
- 1 tablespoon vanilla

Coatings: crushed graham cracker crumbs, confectioners sugar or crushed nuts

Directions:

- In a heavy saucepan, over low heat, melt chips with butter.
- Stir in cocoa until smooth.
- Add condensed milk and vanilla.
- Cook and stir until thickened and well blended, about 4 minutes.
- remove from heat.
- Chill until firm adequate to handle.
- Shape into 1 inch balls.
- Roll in desired coating.
- Chill until firm.
- Store, covered in refrigerator

Making candy can be a admittedly fun activity. And the results are so worth the effort. Whether for a special opening or just for the delight of it, turning out your own candy is very rewarding. Here is a great recipe for chocolate candy--my favorite! These yummy Mint Chocolate Truffles are from a recipe I got years ago from a Cooking Light magazine.

Mint Chocolate Truffles

Homemade Chocolate Candy Recipes

1/3 cup semisweet mint-chocolate chips
4-oz Neufchatel cheese, softened
16-oz pkg powdered sugar, sifted
1/4 cup unsweetened cocoa
1/4 cup sifted powdered sugar
2 tbsps semisweet mint-chocolate chips

Place the 1/3 cup mint-chocolate chips in a microwave safe medium to large bowl. Microwave on high for 1 minuscule or until the chips are almost melted. Stir until smooth. Set aside to cool.

When chocolate is cooled, add the Neufchatel cheese and beat at medium speed of an electric mixer until smooth. Add the powdered sugar to the mixture and beat until well blended. Press the mixture into a 6-inch square on heavy-duty plastic wrap and cover with added plastic wrap. Chill at least one hour. Remove the top sheet of plastic wrap and cut truffle into 48 squares. Roll each square into a small ball and place on waxed paper. Roll half the balls in the unsweetened cocoa and the other half in the powdered sugar. Place the 2 tablespoons of the mint-chocolate chips into a heavy-duty zip-top plastic bag. Microwave on high 1 minuscule or until the chips are softened. Knead the bag until the chips are smooth. Make a tiny snip in one lowest angle of the bag. Drizzle chocolate over the balls that have been rolled in cocoa. Serve at room temperature.

If you've been wondering how to make raw flax seed crackers or just seeing for a good basic easy, healthy raw flax seed cracker recipe then I'll make it easy for you. As a nurse, amateur chef and raw foodist - vegan I've been development raw food recipes for a decade and have made many distinct types of flax seed cracker recipes. I'm, going to show you the simplest and fastest way to make flax seed crackers.

There are many distinct types of raw food flax seed cracker recipes but beginning with something straightforward and then adding spices or ingredients can make it much more flavorful.

Homemade Chocolate Candy Recipes

Flax seed crackers are dehydrated crackers. Commonly a dehydrator is needed, although you can try to make them in an oven and keep it under 120 degrees - if it has a fan in back. Any way that can take quite a few hours and would be a major drain on your electric bill. And I don't recommend it - it may be too hot and damage the enzymes that dehydrating at a low climatic characteristic is supposed to preserve.

2 1/2 - 3 cups or more of pure filtered water

Mix together in mixing bowl and add more water if necessary. It should be very moist. Don't worry - it does not have to be perfect. They all the time turn out. Spread onto dehydrator trays about 1/4 inch thick.

Use a pizza cutter to cut into squares. Harden at about 95 degrees for 12-24 hours or until they look dried and crispy. About half way through the process, re-score with the pizza cutter and place an additional one tray on top and flip over and continue dehydrating.

Prepare a 13 x 9 inch baking sheet by lightly applying cooking spray and then set it aside until needed.

Preheat your oven to 325 degrees Fahrenheit.

Using a medium size saucepan over a very low heat you will add the chocolate chips and butter or margarine and then stir continually, while melting until plane in texture. Stir in the graham cracker crumbs until thoroughly combined.

Reserve ¼ cup of this chocolate graham cracker mixture for ornament and then set aside until needed.

Press the remaining chocolate graham cracker dough evenly onto the ready 13 x 9 inch baking sheet and then set aside until needed.

There are two popular versions of Mississippi Mud Pie. One is a cake-like version and the other is an ice cream pie version (and there are probably more). We are providing both recipes here.

Cake Version

Ingredients:

* 1/4 lb. Butter, 1 stick

* 2 (1 oz. Each) squares unsweetened chocolate

* 3 eggs

* 3 tablespoons white corn syrup

* 1 1/3 cups sugar

* 1 tsp. Vanilla

* 9 inch graham cracker, chocolate or vanilla wafer pie shell (your choice)

Preparation:

In a saucepan, heat butter and chocolate, stirring often, until melted and well blended.

In a detach bowl, beat eggs; stir in the corn syrup, sugar and vanilla.

Slowly add the chocolate composition to egg and sugar mixture, stirring well.

Preheat oven to 350°.

Pour filling into ready pie shell.

Bake 35 to 40 minutes, or until top is slightly crunchy and filling is set.

Serve warm with a scoop of vanilla ice cream or dollop of whipped cream.

Ice Cream Version

Ingredients

1 ready 8 inch (6 ounces) chocolate crumb crust

1 cup powdered sugar

1 cup (6 ounces) Semi-Sweet Chocolate Morsels

1/4 cup (1/2 stick) butter or margarine, cut up

1/4 cup heavy whipping cream

2 tablespoons light corn syrup

1 teaspoon vanilla extract

3/4 cup chopped pecan or walnut, divided (optional)

2 pints coffee ice cream, softened slightly, divided

Whipped cream (optional)

Heat sugar, morsels, butter, cream and corn syrup in small, heavy-duty saucepan over low heat, stirring constantly, until butter is melted and composition is smooth. Take off from heat. Stir in vanilla extract. Cool until slightly warm.

Drizzle 1/3 cup chocolate sauce in lowest of crust; sprinkle with 1/4 cup nuts. Layer 1 pint ice cream, scooping thin slices with a large spoon; ice for 1 hour. Repeat with 1/3 cup sauce, 1/4 cup nuts and ice cream. Drizzle with remaining sauce; top with remaining nuts. ice for 2 hours or until firm. Top with whipped cream before serving.

To make graham cracker crust:

Melt 1/4 cup butter in microwave or stove top

Crumble graham crackers into a fine composition (put in plastic bag and roll with a rolling pin)

Pour graham crackers into the center of a pie tin

Pour melted butter onto graham crackers

Using a fork, press graham crackers up sides of pie tin and over the bottom

*Cupcake pans - these are ovenproof cups for molding the cupcakes. They are normally made of metal, although they can also be stoneware and other materials.

*Cupcake liners - these are round pieces of paper located within the pans before the batter is put in them. The purpose of these is to make it easy to take out the cupcakes from the pans. These can also be made of very thin aluminum foil.

Here are the ingredients:

*2 eggs
*1 cup of milk
*1 teaspoon of vanilla extract
*1/2 cup of shortening
*3 teaspoons of baking power
*1 1/3 cups of sugar
*2 1/4 cups of flour

Baking directions:

1. Put the cupcake liners on the cupcake pans.
2. Preheat your oven to 177 degrees Celsius or 350 degrees Fahrenheit.
3. In a large bowl, beat the eggs thoroughly. When the blend has become fluffy, add in the sugar gradually; this should be followed by the flour, milk, vanilla extract, shortening and the baking powder. Keep beating all throughout. Be sure to mix all things thoroughly.
4. Once you're done with the batter, pour it on the cupcake pans with the cupcake liners. Do not fill the pans as the cupcakes will overflow. The pans should only be about 2/3 full.
5. Put the cakes in the oven and bake for 23 minutes. You will know if they are done by doing the toothpick test. Insert a toothpick in the middle of each cupcake and see if it comes out clean of each. Once finished baking, allow them to cool for awhile before serving.

Cupcakes are also a great way to experiment. You can try mixing in chocolate chips or putting on sprinkles. Using the same recipe above, you can give those cupcakes a twist by adding 3/4 cup of chocolate chips. You can also put some icing on them. Kids are going to love this: put some blue or other colorful icings on top of the cupcake and go bring out your inner child by manufacture faces. You can put in marshmallows or color-coated chocolates for the eyes. You can also put some fillings like jam or cream. Try adding some blueberry jelly or other tasty fillings and you can be sure of second helpings. Now have them with tea or coffee and enjoy!

I make this chocolate homemade candy at the holidays and get new compliments every year. It is so tasty and is made by melting white and dark chocolate together. It is also gorgeous and can be presented 2 separate ways. The red and green m&m's, coconut and white chocolate drizzle set it apart from any treat you'll make this holiday season.

Chocolate Homemade Candy

Homemade Chocolate Candy Recipes

1 box semi sweet chocolate chips (12 ounces)
2 packages white chocolate morsels (11 ounces each)
1 cup marshmallows
1 cup pecans
1 cup rice crispy cereal
1 small box coconut
1 lb. box peanut m&m's (red & green)
1 - 2 teaspoons vegetable oil
one metal pizza pan

Note: Substitute separate color m&m's to fit the holiday of your choice.

Reserve about 5 ounces of the white chocolate morsels (the remainder of the morsels will be mixed with the semi sweet chips). In the microwave oven (in a large glass bowl), melt the semi sweet morsels with all the white morsels (except the 5 ounces set aside) until smooth. Stop microwave every 30 seconds and stir; repeat until all the morsels are melted (being specific not to burn the chocolate). Let the aggregate cool down somewhat and add to the mixture; 1 cup marshmallows, 1 cup nuts, 1 cup rice crispy cereal (mix well).

Spread this chocolate homemade aggregate into a metal pizza pan; flatten mix out to extend to all sides of the pan. Place red and green m&m's on top of chocolate aggregate in a decorative pattern (you will not need the entire 1 lb. Package). Sprinkle coconut on top of chocolate aggregate last.

Take the 5 ounces of reserved white chocolate morsels; melt them in the microwave (stirring every 30 seconds); add 1 to 2 teaspoons vegetable oil to this chocolate mix; melt together and stir thoroughly. Drizzle this aggregate over the chocolate homemade candy.

Cool in refrigerator until thoroughly set (at least 2 hours). Cut into squares or for a more elegant presentation, cut into slim pizza sized slices.
